The Hub City BBQ Cookoff was held last Thursday (10/11). This is an event meant to benefit the Lubbock Chamber of Commerce and has taken place yearly since 2000. Local businesses compete in ribs, brisket, “other”, and dessert. I happen to know one of this year’s judges, and we had the following exchange on the Twitter:

With this glowing recommendation, I am officially announcing my candidacy as a 2019 Hub City BBQ Cookoff Judge.
You may scoff, so for those who doubt my credentials, allow me to provide my lengthy resume:
- Has smoked meats with mild to slight success
- Cohosts a podcast where “food and sports clash at the goal line” (@23Personnel)
- Owns an Evie Mae’s cap and a goal to make their brisket
- Wishes I could make ribs and mac & cheese like The Shack
- Only serves Tom & Bingo’s sauce (on the side)
- Eddie’s Frito Pie would make a good last meal (make it a large)
- Follows @TMBBQ on Twitter
- Learned how to smoke ribs from my friend’s dad who goes to the pasture for some mesquite when the fire starts dying down
- Sets the DVR to record Steven Raichlan’s Project Smoke
- Love my pellet smoker, but sometimes feel like it’s cheating
- Once survived two days at ChiliFest in Snook solely on smoked turkey legs
- Thinks T-ROY COOKS should be a household name
- Promotes local businesses in a weekly post on a popular TTU sports blog (the one you’re reading right now!)
- Has friends on keto (fine, I’ve officially run out of outstanding resume boosting facts & tidbits)
